Outside-Stuffed Chicken

- 4 boneless skinless chicken breasts
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Barbecue sauce, of your choice
- 8 slices cooked and crumbled bacon
- 4 slices monterey jack or shredded mozzarella cheese
- ¼ cup chopped green onion
- ½ cup chopped tomato
- Preheat oven to 350 degrees and lightly spray a casserole dish large enough to hold the chicken pieces.
- Place chicken breasts in greased casserole dish and season with the pepper, garlic powder and Italian seasonings.
- Bake for 25 minutes or until chicken is just done, turning halfway. (25 minutes is perfect in my oven!)
- Remove from oven, turn chicken again so seasoned side is up and pour barbecue sauce over chicken, as much or as little as you want.
- Place bacon evenly on top of chicken pieces and cover with cheese.
- Return to the oven and cook for 8 minutes or until cheese has melted.
- Once cooked, place chicken pieces on individual plates and garnish with tomatoes and green onions.
