Outside-Stuffed Chicken

Think of a great stuffed chicken breast...with the stuffing on the outside!

Serves: 4
  • 4 boneless skinless chicken breasts
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Barbecue sauce, of your choice
  • 8 slices cooked and crumbled bacon
  • 4 slices monterey jack or shredded mozzarella cheese
  • ¼ cup chopped green onion
  • ½ cup chopped tomato
  1. Preheat oven to 350 degrees and lightly spray a casserole dish large enough to hold the chicken pieces.
  2. Place chicken breasts in greased casserole dish and season with the pepper, garlic powder and Italian seasonings.
  3. Bake for 25 minutes or until chicken is just done, turning halfway. (25 minutes is perfect in my oven!)
  4. Remove from oven, turn chicken again so seasoned side is up and pour barbecue sauce over chicken, as much or as little as you want.
  5. Place bacon evenly on top of chicken pieces and cover with cheese.
  6. Return to the oven and cook for 8 minutes or until cheese has melted.
  7. Once cooked, place chicken pieces on individual plates and garnish with tomatoes and green onions.
