Pretzel-Crusted Drumsticks

A zippy spin on fried chicken! This easy-to-make pretzel-crusted chicken is baked in the oven for less mess without less taste.
Serves: 4
  • ½ cup butter, melted
  • ¼-1/2 teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon pepper
  • 1 cup finely crushed pretzels
  • ¼ cup chopped pecans
  • 1-1/2 to 2 pounds chicken drumsticks and/or bone-in chicken thighs
  1. Preheat oven to 350° and remove skins of chicken pieces for a healthier option if desired.
  2. In a shallow dish or pie plate, combine the melted butter, cayenne (add more fore more zip) and garlic powder.
  3. In another shallow bowl, combine the crushed pretzels, chopped pecans and pepper.
  4. Dip chicken in butter mixture, then roll in pretzel mixture.
  5. Place in a greased 9x13 baking dish, or if you like crispier chicken, place on broiling rack with dripping pan underneath.
  6. Bake, uncovered, at 350° for 25 minutes, turn chicken pieces, continue cooking for 20-25 minutes more or until a meat thermometer reads 180°.
