Slow Cooker Taco Soup

Fry some ground beef, throw the rest of the ingredients in the slow cooker and let it simmer all day letting the aroma of taco seasoning fill your house all day!

Serves: 4-6
  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can dark red kidney beans, drained and rinsed
  • 1 can crushed tomatoes
  • 1 can corn, drained
  • 1 quart vegetable juice (I use V8 juice)
  • 1 package taco seasoning
  1. Brown ground beef and drain.
  2. Place all ingredients in slow cooker.
  3. Stir and simmer on low for the day.
  4. If in a hurry, cook on high for 4 hours.
  5. Serve with grated cheddar or Tex Mex cheese and can garnish with sour cream and crushed tortilla chips if you please!
