Birthday Cake Pancakes

All the flavour of a birthday cake compacted nicely into pancakes!
Serves: 4
  • ¾ cups flour
  • ½ cup yellow cake mix
  • 1 tbsp sugar
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup buttermilk
  • 1 large egg
  • 1 tbsp canola oil
  • 1 tsp vanilla extract
  • 2 tbsp (or more) of sprinkles
  • Whipping cream
  • Powdered sugar
  • Vanilla
  1. Heat large skillet on medium.
  2. Mix dry ingredients together: flour, cake mix, baking powder, baking soda and salt together in medium sized bowl.
  3. In separate bowl combine wet ingredients: buttermilk, egg, canola oil, vanilla and mix well.
  4. Add wet ingredients to dry ingredients and whisk until well incorporated.
  5. Add sprinkles...less or more, whatever you please, but sprinkles do 'bleed', so don't over-stir.
  6. Add ~1/2 cup of batter to hot skillet and flip when batter starts bubbling. Cook until golden brown.
  7. To make topping beat whipping cream, powdered sugar and vanilla together until stiff peaks form. I preferred to have my topping more of a whipped cream texture (~1/2 cup whipping cream, 1 tbsp powdered sugar, ½ tsp vanilla) but if you want to have more of a glaze, add more powdered sugar until you get your desired texture.
  8. Top with more sprinkles!
