Strawberry Rhubarb Crisp

A sweet crisp to make with all those fresh strawberries and rhubarb in the summer.

  • 1 cup sugar
  • 3 tbsp flour
  • 3 cups sliced fresh strawberries
  • 3 cups diced rhubarb
  • 1½ cups flour
  • 1 cup packed brown sugar
  • 1 cup butter
  • 1 cup rolled oats
  1. Preheat oven to 375 degrees
  2. Mix together in a large bowl all the ingredients for the filling: sugar, 3 tbsp flour, strawberries, and rhubarb. Place in 9x13 baking dish.
  3. For the topping cut the butter into the 1½ cups o flour brown sugar and oats until crumbly and sprinkle on top of the strawberry rhubarb filling.
  4. Bake for 45 minutes or until crisp and lightly browned.
The recipe for the topping makes a lot. Feel free to half it if it's too much for you or you don't have as sweet of a sweet tooth as me!
