  • 1 cup soft butter
  • ¾ cup icing sugar
  • 2¼ cup flour (divided)
  • 4 eggs
  • 1½ cups sugar
  • 3 limes; ⅓ cup lime juice & 2 tbsp lime zest
  • 1 tsp baking powder
  • 1½ cups raspberries
  1. Preheat oven to 350º and grease 13″x9″x2″ glass pan or two 9″x9″x2″ glass baking pans with canola oil spray (butter does NOT work!)
  2. In mixing bowl cream butter and icing sugar. Add 2 cups flour and beat until combined.
  3. Press mixture into a greased pan(s) and bake at 350º for 20 minutes until lightly browned
  4. Meanwhile, in mixing bowl, beat eggs, sugar, lime juice, lime zest, remaining ¼ cup flour and baking powder until well combined.
  5. Sprinkle raspberries over top of baked crust and then pour filling over berries.
  6. Bake for 30-35 minutes at 350º until lightly browned and filling is set.
  7. Cool on wire rack & store in fridge.
  8. ENJOY
The original recipe called for orange zest with lemon juice. We only had limes the first time we made it and loved it so much we don't change the recipe.
