This rich lime pie is easy to make and easier to devour! It will leave you wanting more and more.

Serves: 6
  • 8 oz softened cream cheese
  • 3 egg yolks (save the whites if you want a meringue topping)
  • 4-5 oz fresh squeezed lime juice (bottled ReaLime juice is fine)
  • 14 oz can sweetened condensed milk
Graham Cracker Pie Crust
  • 1¼ cups crushed graham crackers
  • ¼ cup melted butter
  • ½ cup sugar
  • (or pre-made 9" graham cracker pie crust)
Meringue Topping
  • 3 egg whites
  • 3 tbsp sugar
  1. If making your own graham pie crust, mix crushed graham crackers, melted butter and sugar together and press into 10" pie plate and cool in refrigerator to set for at least 10 minutes.
  2. Pour condensed milk into blender.
  3. Add cream cheese gradually, in small portions and mix until smooth.
  4. Add egg yolks and blend well.
  5. Pour in lime juice and continue blending until smooth.
  6. Pour mixture into graham cracker crust.
  7. Optional: whip the 3 egg whites with 3 tbsp of white sugar until stiff peaks form. Decorate on top of pie as you see fit.
  8. Bake at 350F for 10 minutes.
  9. Let stand for 10 minutes.
  10. Refrigerate---the longer the better!
