Recipe type: Side
Serves: 4-6
Ingredients
  • 4-5 small/medium red potatoes (~1-1.5 lbs), cut into cubes
  • 2 pieces of bacon, cooked & crumbled or ¼ cup bacon bits
  • ¼ cup prepared ranch dressing
  • ¼ cup sour cream
  • 1 cup cheddar cheese, divided in ½
  • 1 tbsp fresh or dried parsley
  • 2 green onions, sliced
Instructions
  1. Cut up potatoes, I like about 1" cube size, and boil them until tender---don't let them fall apart!
  2. As potatoes are cooking, cut up bacon pieces, fry, drain and set aside.
  3. Preheat your oven to 350ºF.
  4. Mix the ranch dressing, sour cream, ½ cup of the cheddar cheese, bacon, and parsley together.
  5. When potatoes are cooked, drain them, put them back in the pot and add in the ranch mixture and stir well to combine.
  6. Place potato mixture in a greased 8x8" (or similar size) casserole dish and top with the remaining ½ cup of cheese.
  7. Bake, uncovered, for about 30 minutes or until cheese is nice and bubbly. Add slices of green onion on top and serve.
Notes
Doubles well for a larger crowd; can prepare ahead of time and keep in fridge until ready to bake.
