I’m actually not that big a fan of pork chops. I love the way my mom cooks them slowly in mushroom sauce in the oven, but any time I try to do this with my slow cooker…my pork dries out and is crumbly (I have no idea why!). My dad used to grill the best pork chops in a honey mustard sauce that were to die for…but (no offense, darling) my husband has had no luck with the same sauce, same method. Something about dad’s grilling skills that I miss dearly.
I do like pork, and it’s a great meat to add to our menu plan rotation, so I was thrilled to discover this amazing pork chop marinade for grilling chops at the end of the summer, and it’s been a hit every time. Time to share it!
You will need:
- 2 tsp onion powder
- 1 tsp oregano
- 2/3 cup canola oil
- 1⁄2 cup lemon juice
- 1⁄2 cup soy sauce
- 2 tbsp brown sugar
- Pepper to taste
- 4-6 pork chops (whatever cut you’d like)
Simply place pork chops in marinading container or Ziploc bag, combine the rest of the marinading ingredients into a small bowl and whisk until well combined and pour over pork chops! Voila! Put in refrigerator, of course, and remove from refrigerator 1 hour before you are going to grill. Grill to your taste making sure that the internal temp reaches 160ºF. (I leave the grilling to my husband!).

- 1⁄2 cup lemon juice
- 1⁄2 cup soy sauce
- 2 tbsp brown sugar
- Pepper to taste
- 4-6 pork chops (whatever cut you'd like)
- Place pork chops in marinading container or large Ziploc bag.
- Mix all marinade ingredients into a small bowl and whisk well; pour over pork chops and refrigerate.
- Marinade at least 2 hours - overnight and grill to your taste, making sure internal temperature is 160F.

We’ve tried this with thicker-cut chops (as pictured) and thinner bone-in pork chops and they both tasted amazing.
