I love baking, that’s no secret, but one of the things I don’t bake often are muffins. Probably because the kids are wishy-washy in their love/hate of the muffin (you know how kids are!), but this one always seems to be a winner!
You will need:
- 1¼ cups buttermilk
- 1 egg
- 1/3 cup canola oil
- ¼ cup liquid honey
- 1 tsp vanilla
- 1½ cups 100% bran cereal
- 1 cup raisins
- 1½ cups all-purpose flour
- ¾ cup brown sugar
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp nutmeg
Beat buttermilk, egg and canola oil together. Add vanilla and honey and mix well; stir in cereal and raisins. Add the rest of the dry ingredients: flour, brown sugar, baking soda, baking powder and nutmeg and stir until just combined. Pour into greased or lined muffin tins and bake at 400ºF for 15-20 minutes.

Had some buttermilk to use up, so I just made these and they were delish! Did a few subs – chopped dates for raisins (not a raisin fan), cut back on the sugar to 1/2 cup but will try only 1/4 next time, and sprinkled a few chopped walnuts on top.

These were FABULOUS!!!!! Bran Muffins have always been my favorite – my mom used to make them for us when we were little. And I'm passing the love along to my kids now. I did leave out the raisins, because while my kids love them, they freak out if I put things like fruit or nuts into their muffins or pancakes. Ha ha! I used fresh ground white wheat, kefir for the buttermilk, and also only used 1/2 cup brown sugar. Slathered with butter, this recipe went straight into my "keeper" file. I happened across your recipe and had to chuckle – my husband and I love bran muffins but like yours, our kids can be so-so about them. We don't care for raisins that much, so we use diced apples instead, for yummy apple bran muffins. I'm looking forward to trying your recipe, thanks!
