When 20 bags of delicious Hershey’s Chipits products arrive at the post office for you…the possibilities seem endless! I loved the chocolate Skor trifle I made for harvest this small, so I wanted to try my hand at another trifle with Chipits Skor Bits with some holiday flavour. I decided to do a gingerbread trifle and it is oh so divine!
Gingerbread Trifle
Cake
- 1/3 cup butter or margarine
- ½ cup sugar
- 1 egg
- 3/4 cup water
- 1/2 cup molasses
- 1½ cups all-purpose flour
- 1 teaspoon ground ginger
- ½ teaspoon ground cloves
- ½ teaspoon baking soda
- ¼ teaspoon salt
The Other Layers
- 1-2 large packages of vanilla instant pudding plus milk to mix with (this depends on the size of your trifle bowl)
- 1 package Chipits Skor Toffee Bits
- Cool Whip topping
For the gingerbread cake, cream butter or margarine and sugar until well combined and then beat in the egg. In a liquid measuring cup, mix the water and molasses together and set aside. In a medium bowl, combine the flour, ginger, baking soda and salt. Add the flour mixture to the creamed mixture alternately with molasses and water mixture. Beat well after each addition and place cake batter into greased 8×8″ baking pan. Bake at 350°F for 26-28 minutes or until a cake tester inserted in the center comes out clean.
Make your packages of vanilla instant pudding mix according to directions on the box (whisk or beat pudding mix and 2 cups of milk for 2-5 minutes until thick and let sit for a couple of minutes). I needed 2 packages for the size of my trifle bowl, you may only need or want 1.
Once the cake has cooled, you can layer your trifle as follows:
- Gingerbread cake
- Vanilla pudding
- Chipits Skor Toffee Bits
Repeat as many layers as you need, top with Cool Whip topping and garnish with more Skor bits and refrigerate.

- ⅓ cup butter or margarine
- ½ cup sugar
- 1 egg
- ¾ cup water
- ½ cup molasses
- 1½ cups all-purpose flour
- 1 teaspoon ground ginger
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1-2 large instant vanilla pudding packages (depending on how big your trifle bowl is)
- 2-4 cups milk
- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the water and molasses. Combine the flour, ginger, baking soda and salt; add to creamed mixture alternately with molasses mixture, beating well after each addition. Pour into a greased 8-in. square baking pan.
- Bake at 350° for 28-32 minutes or until a toothpick inserted near the center comes out clean.
- In a large bowl, make pudding mix according to package directions and let stand for 2 minutes.
- In your trifle bowl, layer as follows:
- Gingerbread cake
- Vanilla pudding
- Chipits Skor Toffee Bits
- (As many layers as your trifle bowl can fit)
- Spread whipped topping over the top and sprinkle with remaining toffee bits.

I am finding my love for trifles is largely because you can make them the day before and let them soak in all the flavours in the fridge to serve the next day—they actually taste best this way!
