Another recipe I always reach for when I have not-so-fresh bananas are these Monkey Bars, yet another recipe from my mother-in-law (I am slowly blogging about all my favorites, she has a lot!). She said this recipe originally comes from a cook book called “Cookies for Kids” that was given to her by one of her music students years ago. Thanks to that student because we all love this recipe! Somehow little sections of this cake just seem to disappear if left out in the open.
Ingredients
- ¾ cup margarine or butter
- 2/3 cup white sugar
- 2/3 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 3 – 4 ripe bananas, (1-1½ cups mashed)
- 2¼ cups flour
- 2 tsp baking powder
- 1 cup semi-sweet chocolate chips
Directions
- Preheat oven to 350ºF
- Cream margarine/butter with sugars
- Add the egg and vanilla and beat until well-mixed
- Mix in remaining ingredients and spread into greased 9×13 pan
- Bake for 25 minutes or until toothpick inserted into center comes out clean
