I made these oatmeal coconut chewy cookies cookies just once before last summer and I commented on my Pinterest board that these were one of my new favorite cookies. Why I haven’t made them again until now? Pure forgetfulness! But I had an urge for a different cookie on the weekend, these popped into my brain, and I’m sure glad they did. There’s a printable and easy-to-follow recipe below.
What you will need:
- 1 cup butter, softened
- 1 1/4 cup brown sugar, packed
- 3/4 cup sugar
- 2 tsp vanilla extract
- 2 eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 2 1/4 cups flour
- 1 cup quick cooking oats
- 1 1/2 cups shredded, sweetened coconut

- 1 cup butter, softened
- 1¼ cup brown sugar, packed
- ¾ cup sugar
- 2 tsp vanilla extract
- 2 eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 2¼ cups all purpose flour
- 1 cup quick cooking oats
- 1½ cup shredded, sweetened coconut
- Preheat oven to 350°.
- Cream together butter and sugars, until combined.
- Add the eggs and vanilla, beat until they are fully incorporated.
- Add baking soda and baking powder and mix.
- Add about ½ your flour, and mix until the flour is just incorporated.
- Scrape down the sides of your bowl, and then add the second half of your flour, mixing until just incorporated.
- Add oats and coconut, mixing until they’re mixed in nicely.
- Use a cookie scoop or roll the dough by hand into little 1" balls.
- Place the dough balls on a silicone- or parchment-lined baking sheet, about 2" apart.
- Bake for 8-10 minutes, until the edges are just slightly brown, but the center is still light and gooey looking---this is what makes it moist and chewy!
- Let the cookies finish cooking on the baking sheet for 5 minutes, then move them to a cooling rack.

These cookies are soft and chewy and have just the right amount of coconut! I love coconut…so there could always be more, but my husband doesn’t care for coconut but still loves these cookies! These sound yummy! We are a dairy free family due to an allergy, and one thing I love about coconut recipies, is subbing coconut oil for butter doesn't make them taste off, it just makes them taste more 🙂 These might have to go on the list.
Yes I bet substituting with coconut oil would make these even better!
