If you’re looking for a really easy breakfast to serve for company you’re having, I have to highly recommend this overnight French toast that I made for Christmas Eve breakfast this year. It was really easy to make and all I had to buy in preparation was white bread, I have everything else all the time at home. It takes just 5 minutes to put together the night before, and 45 minutes to bake in the morning.
You will need:
- 12 slices white bread
- 2/3 – 1 cup (to taste) brown sugar
- 1 tsp cinnamon
- 5 eggs
- 1½ cups milk
- 1 tsp vanilla

- ½ cup butter or margarine
- 12 slices white bread
- ⅔ - 1 cup brown sugar (adjust as you need)
- 1 tsp cinnamon

- Melt margarine in microwave and pour into a 9x13 baking pan.
- Put 6 slices of bread in bottom of pan, squish them a bit so they're flat.
- In a bowl mix brown sugar (2/3 - 1 cup depending on your taste) with 1 tsp cinnamon.
- Sprinkle ½ of this sugar mixture over bread.
- Add another layer of 6 slices of bread.
- In a bowl, whisk eggs, milk, and vanilla until well blended.
- Pour over bread layers.
- Sprinkle the top with the remaining sugar mixture.
- Cover with tinfoil and refrigerate overnight.
- Bake covered at 350F for 30 minutes.
- Uncover and continue baking for 15 minutes or until set and browned.
