I am really excited to share this raspberry citrus bars recipe with you! My mother-in-law (MIL) has a few (or just one big one, I’m not sure) raspberry bush(es) in her garden and we’re always encouraged asked told to go pick them or to use up the ones that she has picked! 😉 So a few summers ago my sisters-in-law came across this AMAZING dessert recipe to use up some raspberries, so this time I thought I’d document and share! (Printable recipe at bottom).
Ingredients
- 1 cup soft butter
- ¾ cup icing sugar
- 2¼ cup flour (divided)
- 4 eggs
- 1½ cups sugar
- 3 limes (for juice and zest)
- 1 tsp baking powder
- 1½ cups raspberries


Preheat oven to 350ºF and grease a 9×13 glass baking dish with canola oil spray (butter does NOT work to grease for this recipe!). In mixing bowl cream butter and icing sugar. Add 2 cups flour and beat until combined
Press mixture into a greased 13″x9″x2″ pan or two 9″x9″x2″ baking pans.
Bake at 350º for 20 minutes until lightly browned
Meanwhile, in mixing bowl, beat eggs, sugar, the juice of 3 limes (about 1/3 cup), the zest of 3 limes (about 2 tbsp), remaining flour, and baking powder until well combined
Sprinkle raspberries over top of baked crust
Bake for 30-35 minutes at 350º until lightly browned and filling is set.

- 1 tsp baking powder
- 1½ cups raspberries

- In mixing bowl cream butter and icing sugar. Add 2 cups flour and beat until combined.
- Press mixture into a greased pan(s) and bake at 350º for 20 minutes until lightly browned
- Meanwhile, in mixing bowl, beat eggs, sugar, lime juice, lime zest, remaining ¼ cup flour and baking powder until well combined.
- Sprinkle raspberries over top of baked crust and then pour filling over berries.
- Bake for 30-35 minutes at 350º until lightly browned and filling is set.
- Cool on wire rack & store in fridge.
- ENJOY
In the past when we girls have made these raspberry citrus bars….they disappear as soon as it cools! It’s very addictive, be warned!
